Corned Beef with Cabbage, Carrots and Red Potatoes

Celebrate St. Patty's Day or any other day with this incredibly easy and delicious corned beef slow-cooker recipe!

I had NO idea I liked corned beef so much until I made this myself.  This was seriously delicious! My daughter ate two helpings and my husband and I had each had one very large helping!  We all cleaned our plates!

Previous to this, I had tried corned beef two times in my life. Once was from a restaurant. It was so salty I couldn't eat it. I vowed never to try it again. The only other time besides this I tried corned beef was at a former boyfriend's house. His mom was Irish, so I thought I'd give her corned beef a chance.  She assured me I would love it!  Of course, I did!  When it came time to try this myself, I sought her advice!

You're going to LOVE how easy this recipe is and how quickly you can throw it together. Things don't have to be complicated to be delicious. This dish proves it, hands down!

Corned Beef with Cabbage, Carrots and Red Potatoes

1 3-pound corned beef brisket (I bought a low-sodium one and I highly recommend it!!)
1 head of cabbage
3-4 large carrots
24 oz. baby red potatoes

Directions (I used my 6.5 Quart Slow Cooker for this):
Place your brisket in the bottom of your crock.  It will come with a seasoning packet.  Sprinkle the contents of that packet over your brisket.  Cover your brisket with water.  (It took me about 4 cups.)  Next, place your veggies on and around your brisket.  Sprinkle your cabbage with salt and pepper like I did if you wish!  

Cook on LOW for 9-10 hours or on HIGH for 5 hours.
